What is the risk of opening the ftp port of your firewall ? By opening this port, are you presenting hackers a highway of opportunities to hack your system of is this statement an overreaction ?

haha no. unless you have a mis configured ftp server.
what some people do (i do this as well), is run an ftp server on a port of your choice (ex. 2245) then open a hole for that port and just tell the peopel u want to give access to your ip and port number and you shouldnt really have to worry about hackers trying to get u at port 21.

Opening your port for ftp is not a risk for your network by if your soft ftp is not very secure you have a risk
The better is to param your firewall with address ip of your customer for access to ftp

In general opening a port is a new risk.
FTP protocol is somehow unsecure as password are no encrypted. But this is not a problem fore an anonymous ftp (beware to chroot your ftpd).
The second problem is to allow connexion to the firewall machine itself. This is not a very good idea.

If you have a very bad configuration of you're FTP server it's a very big risk
But if you knnow configure you're firewall no problemes with opening this port
But it's higly recommended to read you're logs
